What’s The Difference Between Short Ribs And Regular Ribs?

When referring to short ribs, usually those ribs are made out of beef. On the other hand, regular ribs would be deemed as pork ribs.

Also, based on the location of the short ribs it is equivalent to the spare ribs inside a pig. Additionally, both types of meat taste amazing when they are falling off the bone.

What Does Braising Mean?

Going off the definition of braised, it is to lightly fry, then stew the food slowly in a closed container.

This is fitting for braised short ribs, for instance, an essential step for this recipe is to sear the ribs then stew the ribs until the meat is falling off the bone.

In addition, the fall off the bone beef ribs will create a sauce that will transform the meat into BBQ beef ribs, also known as BBQ braised short ribs.

Should You Sear Ribs Before Slow Cooking?

The step of searing your ribs is vital depending on what type of ribs you are attempting to cook. If you are trying to recreate a braised short ribs recipe, then searing is a part of that process.

However, outside braised short ribs, searing is not a necessary step. Searing the ribs will give it a fried type of texture, so if you are aiming for that then sear away, but again, it is not a necessary step to have some amazing ribs.

Can You Over Braised Short Ribs?

The only way you can over braise your short ribs is if you burn the ribs. By the way, any food has the potential to burn if you cook it for too long.

To prevent this from happening you have to be mindful of the oven temperature. For short ribs, I recommend cooking them at 350 degrees.

To clarify, my attempt at creating a braised short ribs recipe was SHORT from greatness due to using too high of a temperature.

Before we move forward let’s acknowledge that short pun because the ribs are called SHORT….you get it? I’m sorry, I understand I’m one-joke short of being considered corny, but I couldn’t help myself.

So, I cooked the short ribs at 450 degrees. Certainly, with that amount of heat, you will not be able to have the meat fall off the bone without compromising the sauce. In other words, either the meat will be tough, or the sauce will burn.

Why Are My Braised Short Ribs Tough?

Maybe because I enjoy BBQ, but braised short ribs taste magnificent, and with the right ingredients you are pretty much-eating BBQ braised short ribs.

As good as that may sound, BBQ beef ribs are worthless if they’re tough. If your braised short ribs are tough it is more than likely because you didn’t cook the ribs long enough.

Beef ribs are thick so it takes a while before the meat will start to become tender. Be patient and let the food cook for multiple hours before taking it out of the oven.

What Goes With Braised Short Ribs?

Any great braised short ribs recipe you use will go great with vegetables and wine. Ironically enough, these ingredients are essential for this braised short rib recipe.

Other than those things, BBQ braised short ribs taste fantastic over some rice or potatoes.

What Temp Should Short Ribs Be Cooked?

Short ribs are best cooked at 350 degrees. This is to say that, due to the meat of the short ribs being so thick, it will take a while for the meat to thoroughly cook.

Additionally, if you cook the food for too long at a high temperature, then naturally the food will burn.

If BBQ beef ribs aren’t your thing, then use white wine. To be frank, any alcoholic beverage will go good with braised short ribs, whether you are using it to cook, or to drink alongside your meal.

Should You Brine Your Short Ribs?

Brining your short ribs is not a necessary step, but it most definitely enhances the experience of eating short ribs.

It is essential to realize that a short beef rib is a thick piece of meat. As a result, merely seasoning the meat will only affect the outside layer of the meat.

On the contrary, applying a brine for your short ribs will enhance the flavor throughout all the meat. Not to mention, this will help create fall off the bone beef ribs.

Making The BBQ Braised Short Ribs Recipe

  • Fall Off The Bone Beef Ribs Brine
    • 3 Pieces of Short Ribs
    • 1 Tsp of Salt
    • 3 Cups of Jalapeno Juice
    • 2 Tbsp of Oil
  • Caramelizing Vegetables
    • 1/4 Head of Cabbage
    • 1/2 Tsp of Black Pepper
    • 1 Tsp of Red Crushed Pepper Flakes
    • 1/2 Tsp of Chili Powder
    • 1/4 of Onion
    • 1/2 Tsp of Paprika
    • 9 Baby Carrots
    • 1/2 Tsp of Cayenne Pepper
    • 6 Pieces of Fresh Thyme Leaves/Stems
    • 1 Stick of Celery
    • 6 Garlic Cloves
    • 1 Tsp of Salt
    • 3 Bay Leaves
  • Stewing BBQ Beef Ribs AKA BBQ Braised Short Ribs
    • 2 Tsp of Worcestershire
    • 1 Cup of Sweet Red Wine
    • 2 Tbsp of Liquid Smoke
    • 1/4 Cup of Ketchup
    • 1/4 Cup of Dark Brown Sugar
  • Equipment

Brine The Short Ribs

Place the ribs in a large bowl and add the jalapeno juice and 1 teaspoon of salt. Make sure the salt is evenly coating the ribs and let the meat soak in the jalapeno juice for 12-24 hours.

When the brine is finished, do not throw away the jalapeno juice.

The Braising Begins

After the brine, sear the ribs with oil for 3 minutes per side, leading to a total of 12 minutes. Also, start cutting up the vegetables.

Caramelizing The Vegetables

Remove the ribs, then replace it with the vegetables and all the dry ingredients, except for the brown sugar. Additionally, those ingredients will cook for 20 minutes.

Stew The Meal

Add the wet ingredients and brown sugar with the vegetables and stew for 10 minutes. The wet ingredients will also include the jalapeno juice that you used to brine the meat.

You will use 1-3 cups of jalapeno juice. The exact amount will depend on how much of the jalapeno flavor you want in your short ribs.

Place Meal In Oven

While your food is stewing, preheat the oven to 350 degrees. After the stew process, add the ribs and cover the food in foil.

When the oven is done preheating, place the food into the oven and cook for 4 hours.

A BBQ Beef Ribs Feast

Remove the ribs from the oven, then remove the foil from over the ribs. Now, all there is left to do is to dig in.
