You may have to be crazy to like regular fruit cake, but you don’t have to be all that to enjoy dark fruit cake. In a way, I would like to call this a dark rum cake recipe because dark fruit cake just isn’t the same without being soaked in rum.

Open-Minded To Dark Fruit Cake

Let me start off by apologizing to the regular fruit cake lovers who were offended by me calling them crazy.

Enjoy what you enjoy, even though dark fruit cake is still better than that basic fruit cake you all like to eat.

Yes, this is a sincere apology, to you, and your taste buds.

I’M KIDDING, I’M KIDDING! I do not want to be canceled, but if you are going to do it, then at least try this dark fruit cake/dark rum cake recipe out first.

All jokes aside, I was never the biggest fan of fruit cake. In fact, I always thought that fruit cake was overrated.

Additionally, I always feel like I hurt somebody’s feelings during Christmas time because of my nonchalant attitude toward their fruit cake. Sorry, I am not about to get excited over foods that I do not care for.

I promise I do not have any bad intentions. I do not go around terrorizing people while they are eating fruit cake.

Furthermore, I am a good person, honestly.

Then, one day while I was busy being a GOOD PERSON, I was introduced to dark fruit cake.

Although I only tried regular fruit cakes at the time, in my mind, all fruit cakes were the same, so I was a bit hesitant to try the food out.

Thankfully I am a foodie so regardless, I am always down to try new recipes, and I can honestly say that I am ecstatic that dark fruit cake is in my life, to this day!

This Is A Dark Rum Cake Recipe Now?

I enjoyed my first taste of dark fruit cake, but what won me over was the dark rum and sweet red wine that was soaked in every morsel of that delicious cake.

What is crazier than eating regular fruit cake is that this fruit cake/dark rum cake recipe has raisins and prunes in it.

I may not care for regular fruit cake, but I do not hate it.

On the contrary, I absolutely despise raisins and prunes, so for me to still eat this dessert that says a lot!

 

What Do You Soak Fruit Cake In?

When I am making the dark rum cake recipe, I use sweet red wine. What, you thought I was going to say dark rum because this is a dark rum cake recipe?

If you had thought that, then you are correct because I use both sweet red wine and dark rum for the fruit cake to soak in.

What Alcohol Is Best For Fruit Cake?

Since I use dark rum and sweet red wine for this dark fruit cake recipe, naturally, I think that those are the best alcohols to use.

Yet, at one point I made this dark fruit cake with spice rum instead of dark rum and the cake was still delicious, nutritious, and vicious!

So, you can add spice rum as one of the best alcohols to use in dark fruit cake. Outside the alcohols that I have already mentioned, a good alternative would be whiskey or brandy.

Non-Alcohol In Dark Fruit Cake?

Although this recipe has alcohol in it, you do not have to feel pressure to use alcohol just to make this dark fruit cake. A great alternative for alcohol is juice.

The juice can vary from orange, cranberry, apple, etc.

Furthermore, when you are soaking the dark fruit cake with juice, it is recommended to use your favorite juice since the variety of juices that you can use is so broad.

You do not even have to soak the fruit cake if you don’t want to. The cake will not be as moist, but it will still be good nonetheless.

How Long Do You Soak Fruit Cake In Alcohol For Christmas?

Let us take Christmas out of the equation for a second. Any time of the year you decide to make this dark rum cake recipe, you will let the cake soak overnight.

In my lifetime, I came across individuals who let their fruit cake soak for 2 weeks.

There are even people who only eat fruit cake on Christmas, however, they make the fruit cake the day after and let it soak in alcohol for a year.

Talk about patience!

Making The Dark Fruit Cake/Dark Rum Cake Recipe

Ingredients

Fruits, Rum, And Spices:

  • 3 oz Dried Cherries, Chopped or 1/2 cup
  • 3 oz Pitted Prunes, Pitted Chopped or About 1/2 cup
  • 2.5 oz Raisins, or 1/2 cup
  • 2.5 oz Candied Orange Peel, Chopped, or About 1/2 cup
  • 1/8 tsp Ground Nutmeg
  • ½ tsp Ground Cinnamon
  • ½ tsp Ground Clover
  • 1/2 cup Dark Rum

Rum For Soaking The Cake:

  • 1/4 cup Dark Rum And 1/2 cup Sweet Red Wine Or 3/4 cup Sweet Red Wine

Cake Batter:

  • 1 1/2 cup All-Purpose Flour
  • ½ tsp Salt
  • 1 tsp Baking Powder
  • 1 cup Dark Brown Sugar
  • 2 sticks Unsalted Butter
  • 2 tbsp Vanilla Essence
  • 1 tsp Almond Extract
  • ½ tsp Angostura Bitters
  • 5 tbsp Gravy Browning
  • 2 Eggs

Equipment and Tools

  • Container With Lid
  • Stand Mixer
  • Mixing Spoon
  • 8×4-inches Cake Baking Pan Or 9×3-inches Cake Baking Pan
  • Plastic Wrap

Instructions

Soak Fruits, Rum, And Spices Overnight

  1. Add fruits, rum, and spices in a container with a lid.
  2. Let fruits, rum, and spices soak overnight in a sealed container.

Preheat The Oven

  1. After the soaking process is done, preheat the oven to 275 F.

Prepare Cake Mixture

  1. Cream the butter and dark brown sugar until the mixture is smooth and creamy.
  2. Put the eggs in the mixture, one at a time.
  3. Add soaked fruits.
  4. Mix in the gravy browning, vanilla essence, almond extract, and Angostura bitters.
  5. Mix the flour, salt, and baking powder in a bowl to create a flour mixture.
  6. Fold in the flour mixture lightly – do not over-mix.

Prepare Cake Pan

  1. Add a thin layer of butter to the cake baking pan.
  2. Dust some flour in the pan.
  3. Add cake mixture to cake baking pan.
  4. Add the cake pan to the preheated oven.

Bake The Dark Fruit Cake

  1. Bake at 275 degrees for 1 hour 35 mins.

Add Wine Or Wine And Dark Rum To The Cake

  1. Let the cake cool down.
  2. Place the cake on plastic wrap.
  3. Pour the cake in wine or wine and dark rum mixture over the dark fruit cake.
  4. Wrap the cake and let it rest overnight.

What Do I Call This?

Sometimes I call it a dark fruit cake, and sometimes I call it a dark rum cake recipe. Regardless, I will always call this dessert good eating!
