As of lately, I have been terrorizing plates of jerk chicken throughout the land. Every other day, I go to a new Jamaican restaurant to see who has the best jerk chicken in the city.

Moreover, do not get me started on the oxtail and curry goat. Once that meat slides off the bone, it is a wrap.

Jerk sauce is so incredible. The beauty of jerk sauce is that it goes well with practically everything.

Also, this means that using this jerk sauce will be delightful on any part of the chicken, including the wings.

I continued to try out jerk wings at other Jamaican spots, and the jerk chicken wings there were amazing, just like the first place I went to. The only difference between the wings was that none of the jerk wings were sweet.

This helps me come to the conclusion that jerk chicken wings in general are not sweet. Jerk chicken may have a sauce to come with it that is sweet, but the chicken itself is not sweet.

Even the fall-off-the-bone baked jerk chicken wings recipe is not sweet, but it is extremely tasty, nonetheless.

How Long Can I Marinate Jerk Chicken?

I will be honest, I will be hungry more often than not, so a lot of times I skip the marinating step and get straight to cooking.

During the times that I do marinate my jerk chicken, I would let it sit in the refrigerator for a few hours.

Furthermore, the longest that I would let my chicken marinate is for a full day. That is right, 24 hours, which is also 1440 minutes, better known as 86400 seconds. I saw people marinate their chicken for 48 hours before.

Do not get me wrong, the longer you marinate anything, the better it will taste, however, food not being in the freezer for over 24 hours seem a little risky to my already sensitive tummy.

Ingredients:

  • 2 lbs chicken wing
  • 5 oz Red Bell Peppers (about 1 Red Bell Pepper), Seeded
  • 5 oz Green Bell Peppers (about 1 Green Bell Pepper), Seeded
  • 1 oz Habanero Pepper OR Scotch Bonnet (about 3 Habanero Pepper OR 3 Scotch Bonnets)
  • 1/2 tsp Ground Black Pepper
  • 1 tsp Red Pepper Flakes
  • 2 tsp Smoked Paprika
  • 1 tbsp Curry Powder
  • 5 oz Scallions
  • 3 oz Onion
  • 1 oz Fresh Garlic, Diced
  • 1 tbsp All Spice Berries
  • 1 tsp Ground Cloves
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Nutmeg
  • 2 tbsp Olive Oil
  • 2 tbsp Gravy Browning
  • 3 tsp Salt
  • 8 Fresh Thyme Sprigs OR 2 tsp Thyme

How To Make Jerk Seasoning

Dice up your vegetables, then place all the ingredients into a food processor and blend it up. The jerk is now ready to be used.

Instructions For Cooking The Chicken Wings

  1. First, you want to clean your chicken wings. While you are doing this, put the oven on 450 degrees.
  2. Coat chicken wings with jerk seasoning.
  3. Let the chicken wings marinate overnight. This is optional.
  4. Place wings in aluminum foil, which will be on top of a cookie sheet. Make sure the foil is covering up the wings. I would also recommend using multiple sheets of foil to make sure that the chicken wings are secure.
  5. By now, the oven should be ready to go. Cook the wings for an hour. When you take the wings out, make sure that the wings are not sticking to the foil.
  6. Flip the wings, then cover the wings back up. Continue to cook the wings for 30 minutes.
  7. Remove the wings from the oven and enjoy.
