Flat iron steak is a cut of a steer that was deemed to be not good enough to be considered steak.

Look at that piece of meat now. The glow-up was real, and whoever considered this piece of meat to not be steak is now rolling in their grave.

People really slept on the steak until they realized how tender it was. If I ate a steak that tasted like leather, then I would not want to consider that to be steak either.

With that being said, you do not have to eat a rare steak to enjoy a tender flat iron steak. Not everybody wants to eat a bloody steak, so I do not mind sacrificing a little tenderness so that I do not eat raw meat.
