Let me speak on this magnificent recipe of blueberry goodness. This ice cream is probably one of the prettiest recipes I ever created. Additionally, this recipe tastes even better than it looks which says a lot!

Transparent moment, blueberries are cool to eat, but I do not usually go out my way to eat them or anything blueberry flavor related. However, there is a handful of blueberry flavored dessert that gets me head over heels.

For instance, my grandmother used to make a blueberry pie that was literally, till this day, the best dessert I ever had in my life! Another example of blueberry greatness is of course the no-churn homemade blueberry ice cream recipe.

This ice cream is so good that I gave myself a pep talk, and the pep talk went like this. “Jeremy, I know this is a hard truth to swallow, but you cannot eat this amazing ice cream for breakfast, lunch, and dinner, every day, no matter how good it is.”

At that moment I said to my conscience, “You know what, you are right”. I said that while I had an enormous bowl of this blueberry ice cream to the side of me.

Therefore, ensure you’re not using too much heavy cream base on the other ingredients in your recipe. For instance, based on your other ingredients you may have to incorporate some half and half milk or whole milk to reduce the butterfat content in your ice cream recipe.

Whipping your creams creates a structure that helps you create creamy ice cream that’s scoopable. However, overwhipping separates the milk and butter which creates the cream, which then results in a buttery or greasy ice cream.  So again, avoid over whipping your heavy cream to avoid creating a buttery or greasy ice cream.

Using eggs for your no-churn homemade ice cream will be based on multiple factors. One factor is based on the texture of the ice cream. Eggs consist of mainly fat which will affect the texture.

The fat, which makes up a good portion of the egg, freezes differently than water. For instance, ice cream using water instead of eggs will come out a lot harder. Eggs, on the other hand, will make the ice cream soft and creamy.

Another factor to take into consideration is the taste that comes with eggs. If you do not want the flavor of eggs in your no-churn homemade ice cream, then do not use eggs.

    • 1 3/4 cup Heavy Whipping Cream
    • 1/2 cup Sweetened Condensed Milk
    • 1/2 cup Light Corn Syrup
    • 1/8 tsp Salt
    • 2 tsp Vanilla Extract, Optional

Ice Cream Instructions

  1. With a hand or electric blender, blend frozen blueberry until it’s smooth, then set it aside.
  2. Whip the heavy cream to a firm, stable peak. Avoid over whipping the heavy cream because you don’t want to separate the milk from the fat.
  3. Add the blended blueberry, condensed milk, corn syrup, salt, and vanilla extract (optional) to the whipped heavy cream and mix lightly.
  4. Pour blueberry ice-cream mixture into an airtight container with a lid. Then, place in the freezer to solidify the ice-cream mixture. This should take about 2-3 hours, but time may vary base on your freezer.
  5. When the ice-cream mixture is solidified, scoop up your ice cream and enjoy.
