It is Taco Tuesday! Well, maybe when you are reading this it is not a Tuesday, but that does not matter when you are eating some pollo tacos that came from this spicy chicken taco recipe.

Quesadillas, Nachos, And Tacos, Oh My!

I have always enjoyed a good taco, however, usually, I choose the quesadillas and nachos over the tacos.

To put it differently, nachos are superb, and quesadillas are one of my top 3 favorite foods to eat.

On the contrary, tacos still play an essential part in my life.

When I go to a restaurant for the first time that serves Mexican cuisine, I will try the most basic food to see if I need to order anything else in the future.

My philosophy is that if you run a Mexican restaurant, and you can’t make good tacos, then I do not need to try anything else at your restaurant.

Now, if the tacos taste great, then I will spend all my money just to get some more tacos, and I will try everything else on the menu.

When I try out tacos I always go for the chicken tacos. I mean, you can’t go wrong with chicken tacos, right? There is something about chicken tacos that is simple, yet fantastic.

Once I verify that the chicken tacos are good, then I upgrade myself to the shrimp tacos and the steak tacos.

The cool thing about tacos is that they are easy to make. So, why spend money on tacos if you can make them yourself? Because you are lazy sometimes? I am not even going to lie, I spent good money on some tacos because I was lazy, but that is beside the point.

With this spicy chicken taco recipe, you will make some pollo tacos that will immediately send your taste buds into the United States of flavor town.

I think this spicy chicken taco recipe is phenomenal, however, I am aware that not everybody likes chicken as much as I do.

Rather than eating pollo tacos, you can try this crispy pork tacos recipe that will satisfy your taco cravings.

What Are Pollo Tacos?

Pollo tacos is another name for chicken tacos, since chicken means pollo in Spanish.

Pollo tacos also refer to chicken tacos that have been slow-cooked. The slow-cooked method does not have to be specific.

This recipe will involve the chicken being slow-cooked in a large skillet with the lid over it.

How Do I Eat A Taco?

There is no right or wrong way to eat a taco, especially a spicy chicken taco. You can grab the taco and shove it down your mouth.

You can eat your tacos with a fork. Scream happy taco Tuesday before every bite if you want to.

Making The Spicy Chicken Tacos Recipe

Serving Size: 4

  • Pollo Taco Filler
    • 1.5 Lbs Boneless, Skinless, Chicken Thighs
    • 1 Tsp Black Pepper
    • 2  Tsp Chicken Bouillon
    • 1 Tsp Paprika
    • 1/2 Whole Onion
    • 1 Tsp Thyme
    • 1/2 Tsp Cumin
    • 4 Garlic Cloves
    • 1/2 Tsp Chili Powder
    • 2 Cups Water
    • 1/2 Cup Jalapeno Juice
    • 1 Tsp Cayenne Pepper
  • Taco Shell
    • 2 Cups Mexican Blended Cheese
    • 8 Tortillas (Corn Or White Flour)
    • 2 Tbsp Oil
  • Equipment
    • Large Skillet (Big Enough To Fit 4 Chicken Thighs, Half A Onion, And 4 Garlic Cloves)
    • Lid That Can Fit The Large Skillet
    • Mixing Spoon
    • Spatula
    • Two Forks (Optional If You Want To Shred The Chicken)

Cooking The Chicken

Put all the ingredients, except for the tortillas, oil, and cheese into the skillet. Cook the food with the lid covering it for 30 minutes. After that, uncover the food and cook for another 40 minutes. Stir the food occasionally.

Cooking The Tortillas

Once the 40 minutes is up, remove the chicken mixture out of the skillet, but keep a little of the sauce that was created by the chicken mixture.

After removing the mixture, add oil to the skillet. If the skillet can only fit four tortillas, then use 1 tbsp of oil for the first batch of tortillas, then use the rest of the oil for the second batch.

Next, scrub the tortillas in your sauce/oil mixture on both sides. This way, the tortilla is fully coated. For best coating results, only do one tortilla at a time.

Now, add the four tortillas to the skillet, and cook for 4 minutes.

After the 4 minutes, flip the tortillas over, and add 1/4 a cup of Mexican blended cheese per tortilla. Since there are four tortillas, you will need 1 cup of cheese for this batch.

When the tortillas are covered with cheese, cover the skillet with the lid and cook for 3 minutes. 3 minutes later and the tortillas are ready to go. Repeat those steps with the next four tortillas.

Assembling The Spicy Chicken Taco

When the tortillas are ready, add chicken mixture on top of the tortillas, then fold to form your taco. If you want to shred your chicken, then you can do so by using two forks.

Ingredients
  

Stewed Chicken

  • 1.5 Lbs Boneless Chicken Thighs Skinless
