The best curry to use for chicken will depend on your preference. For a milder taste, green curry will work for you. If your taste buds are spicy like a diva’s attitude, then go for the red curry. For something in between, I recommend using the yellow curry. By the way, that is the curry I think goes best with chicken.

How Do You Cut Chicken Thighs Into Curry?

Slicing the chicken thighs into small pieces is your best bet. By doing this you can cook the chicken thighs more evenly.

How Long Do You Simmer Curry Chicken Thighs?

You can let your curry chicken thighs simmer for approximately 35 minutes. Obviously, you do not want to undercook the chicken unless you enjoy raw meat.

    • 2 tbsp Curry Powder
    • 1 tsp Paprika
    • 6 tbsp Light Olive Oil
    • 1 tsp Chili Powder
    • 4 tsp Chicken Bouillon
    • 1 tsp Black Pepper
    • 1 tsp Red Crushed Pepper
    • 3 Medium Sized Garlic Cloves, Diced
    • 1/2 Small Whole Onion, Sliced
    • 3 cups Water
  • Other Ingredients:
    • 1 tbsp Lime Juice for cleaning chicken

Instructions:

  1. Clean boneless chicken thighs using water and lime juice.
  2. Slice the clean chicken into cubed small pieces.
  3. In a mixing bowl, add chicken, curry powder, paprika, chili powder, black pepper, red crushed pepper, light olive oil, chicken flavor bouillon, garlic cloves, and onion. At this point, the garlic cloves and onion will be diced up.
  4. Let the chicken seasoned mixture sit for 2 hrs or overnight.
  5. After 2 hrs, add seasoned chicken and water to a medium saucepan and cook on medium heat for about 35 minutes.
  6. Curry chicken can be served with buttered rice, curry rice, curry potatoes, or stuffed in a roti shell with or without some delicious curry potatoes.
